Ingredients (serves 4)
2 teaspoons fresh thyme leaves
2 garlic cloves, crushed
1 teaspoon cracked black pepper
2 teaspoons dried oregano
1 tablespoon olive oil
4 (150g each) beef steaks (see note)
Barbecued potato salad (see related recipe), to serve
Combine thyme, garlic, pepper, oregano and oil in a jug. Place steaks in a large, shallow glass or ceramic dish. Add thyme mixture. Rub to coat. Cover. Refrigerate for 3 hours, if time permits.
Cook steak on barbecue plate or chargrill over medium-high heat for 4 to 5 minutes each side for medium or until cooked to your liking. Transfer to a plate. Cover with foil. Set aside for 5 minutes. Serve with Barbecued potato salad.
We used beef sirloin steaks. You could also use rump or t-bone steaks.
