Pork Tenderloin Marinade with Mustard

Ingredients:
  • 1 pork tenderloin, approximately 1 3/4 pound trimmed of fat (Serves 8)
  • 1/4 c. coarse mustard
  • 1/4 tsp. cinnamon
  • 2 tsp. curry
  • 2 cloves garlic, minced
Preparation:
  • Combine all ingredients except pork.
  • Coat the tenderloin with mixture. Cover and refrigerate for 6 to 8 hours.
  • Wrap in foil and bake at 350 degrees for 1 to 1 1/4 hours (internal temperature 170 degrees).
  • Let stand about 10 minutes before serving.
