Grilled chicken with yogurt & bulgur wheat salad recipe

Serves 2
Ready in 30 minutes


5 tbsp natural yogurt
1 garlic clove , crushed
1 tsp cumin seeds
1 lemon , juiced
4 large chicken thighs , boneless skinless
100g bulgur wheat
200g chicken stock fresh, cube or concentrate
a handful of chives, parsley or coriander or a mixture, roughly chopped


1. Mix together the yogurt, garlic, cumin and 1 tbsp lemon juice. Pour over the chicken and leave to marinate for 10 minutes. Meanwhile, put the bulgur wheat in a bowl and cover with the stock. Leave for 10 minutes to soften and absorb the liquid. Drain off any excess.

2. Lift the chicken out of the marinade and grill under a medium heat turning once until cooked through, about 8-10 minutes. Stir the herbs through the bulgur wheat with the remaining lemon juice and serve with the chicken.


Recipe extra
Use lamb steaks instead of chicken and stir some chopped mint through the bulgur wheat.
