Grilled parmesan polenta recipe

Ingredients (serves 8)

Olive oil cooking spray
2 cups reduced-fat milk
2 cups chicken stock
1 cup instant polenta
1/2 cup grated parmesan cheese


1. Spray a 4cm deep, 16cm x 24cm (base) heatproof dish with oil.

2. Bring milk and stock to the boil in a saucepan over medium heat. Pour in polenta in a steady stream, whisking constantly. Cook, stirring, for 5 minutes or until thick. Season with salt and pepper. Stir in parmesan. Spoon into dish. Smooth surface. Refrigerate for 3 hours or until firm.

3. Preheat barbecue grill on medium-high heat. Turn polenta out. Cut into 1cm-thick pieces. Spray with oil. Cook for 2 minutes each side or until golden. Serve warm.

Serves: 8 as a side dish
